By heat source
Gas cookers use an open flame fuelled by natural gas or LPG. They give immediate, visible heat control and are the professional cook’s default. Subtypes include sealed burners, open burners, and wok burners with very high BTU output.
Electric cookers use resistive coil elements or radiant rings beneath a ceramic glass surface. Heat is less immediate than gas but very even, especially for baking.
Induction cookers use an electromagnetic field to heat the pan directly rather than a surface. They are the fastest, safest, and most energy-efficient option, but require ferrous (magnetic) cookware.

Microwave / radiation cookers use microwave radiation to excite water molecules inside food. Often combined with convection or grill elements in modern “combination” units.

Off-grid and field
