Sous Vide Cooker / Immersion Circulator: How It Works, Common Issues That We Fix

Sous vide cooking was once the exclusive domain of professional chefs. Today, compact immersion circulators have brought this precision cooking technique into home kitchens. The results — perfectly cooked steaks, tender chicken, silky eggs — are remarkable. But like any precision appliance, sous vide cookers require expert repair when faults develop. At Cooker Repair, we service immersion circulators and sous vide units across Nairobi.

How a Sous Vide Cooker Works

Sous vide (French for “under vacuum”) involves cooking vacuum-sealed food in a water bath held at an extremely precise temperature for an extended period. The immersion circulator is the device that makes this possible.

Here is how it works:

  1. The unit clamps onto the side of a deep pot or container filled with water. The circulator is partially submerged.
  2. A heating element inside the unit warms the water. Unlike most cookers, sous vide elements are designed for low, sustained heat rather than high-intensity bursts.
  3. A circulation pump (impeller) continuously moves the water around the container. This constant circulation is what gives the device its name — and what ensures absolutely uniform temperature throughout the water bath with no hot or cold spots.
  4. A precision temperature sensor (typically a thermistor or RTD probe) measures the water temperature to within a fraction of a degree Celsius.
  5. A control board with a PID algorithm compares the actual temperature to the target and makes continuous micro-adjustments to the element output — maintaining the set temperature with extraordinary accuracy, often ±0.1°C.
  6. A digital display and controls allow the user to set target temperature and cooking time. Many modern units also connect to a smartphone app via Bluetooth or Wi-Fi.

This combination of precise heating, continuous circulation, and sensitive temperature feedback is what produces sous vide’s uniquely consistent results.

Common Sous Vide Cooker Issues We Fix

Problem Likely Cause Our Fix
Unit not powering on Blown fuse or faulty power connection Fuse or connection repair
Water not heating Failed heating element Element replacement
Temperature inaccurate / drifting Faulty temperature sensor (thermistor/RTD) Sensor replacement and recalibration
Circulation pump not running Failed impeller motor Motor replacement
Overheating water bath Faulty control board or sensor Board or sensor replacement
Display not working Faulty display module Display replacement
Wi-Fi / Bluetooth connectivity lost Firmware or module fault Module inspection and update
Unit cutting off during long cooks Overheating protection tripping Thermal management inspection
Water ingress into electronics Damaged seal around shaft or housing Seal replacement and board drying
Burning smell from unit Wiring fault or element degradation Full electrical inspection and repair

Precision Deserves Expert Repair

A sous vide cooker is a precision instrument. When the temperature sensor drifts or the control board loses calibration, you lose the very quality that makes sous vide worthwhile. Our technicians understand the electronic and mechanical complexity of these units and can restore them to specification accurately.
