  3. The Maillard reaction creates the crispiness. The fast-moving hot air strips moisture from the food’s surface quickly, triggering the same browning reaction that deep frying achieves — but without submersion in oil.
  4. A thermostat maintains the set temperature. The control board monitors and regulates heat throughout the cooking cycle.
  5. A timer controls the cooking duration and typically cuts power at the end of the cycle.
  6. The food basket sits in a drawer that slots into the unit. Most baskets have perforations to allow full air circulation underneath as well.

The interaction between the heating element, fan motor, and control board is where most faults originate.
