How an AGA Cooker Works

An AGA is a heat-storage cooker — meaning it stores heat in its cast iron body and releases it continuously rather than generating heat on demand. Traditionally fuelled by solid fuel or oil, modern AGAs are also available in gas and electric versions.

The AGA maintains a constant internal temperature across its ovens and hotplates at all times. A thermostat regulates the heat source — burner or electric element — to keep the cast iron mass at its target temperature, typically around 200–250°C in the roasting oven and somewhat lower in the simmering oven. Because the cooker is always at temperature, it is ready to cook at any moment without preheating.

The hotplates on top are directly heated by the cast iron and covered by insulating lids when not in use to conserve heat. Boiling and simmering happen directly on the hotplate surface. The ovens — typically two to four in number — differ in temperature from hottest (roasting) to coolest (warming), with their temperature determined by their position relative to the heat source.
