Deep Fryer: How It Works, Common Issues That We Fix

A deep fryer is one of the most satisfying kitchen appliances to use — drop in your food, and within minutes you have golden, crispy results. Whether in a home kitchen or a busy commercial setup, deep fryers are workhorses that take serious heat — literally. At Cooker Repair, we service and restore deep fryers of all sizes across Nairobi.

How a Deep Fryer Works

A deep fryer operates on a straightforward principle: submerge food entirely in hot oil at a precise temperature, cook it fast, and produce a sealed, crispy exterior while the inside stays moist and fully cooked.

Here’s how the system works step by step:

  1. Oil is poured into the tank. Most fryers use a stainless steel or coated basin designed to hold and heat large volumes of cooking oil safely.
  2. The heating element activates. An electric immersion element sits directly inside or beneath the oil tank. When switched on, it heats the oil rapidly and evenly.
  3. The thermostat regulates temperature. Oil temperature typically ranges from 150°C to 190°C depending on what’s being cooked. The thermostat cycles the element on and off to maintain the set temperature.
  4. A safety high-limit switch acts as a backup. If the thermostat fails and oil overheats dangerously, this secondary thermal cutout trips and shuts the fryer down — preventing fire or oil combustion.
  5. Food is lowered in a basket. The wire basket holds food and allows it to be lifted cleanly when done, letting excess oil drain back.
  6. A timer (on some models) counts down cooking time and alerts the user.
  7. A drain valve allows used oil to be safely emptied and replaced.

The combination of the heating element, thermostat, and high-limit cutout is what makes a deep fryer both effective and safe — and when any of these components fail, the fryer either stops working or becomes dangerous.

Common Deep Fryer Issues We Fix

Problem Likely Cause Our Fix
Fryer not heating Failed heating element or blown thermal fuse Element or fuse replacement
Oil not reaching set temperature Weak element or faulty thermostat Element or thermostat replacement
Fryer overheating, smoking oil Thermostat stuck open, not cutting off Thermostat replacement
Safety cutout keeps tripping Failing thermostat allowing excess heat Full thermal system inspection
Fryer trips the power breaker Short circuit in element or wiring Electrical inspection and rewiring
Pilot light / indicator not working Faulty indicator lamp or wiring Lamp or wiring repair
Basket lift mechanism broken Worn motor or cable (auto-lift models) Mechanism repair or replacement
Oil leaking from drain valve Worn valve seal or cracked valve body Seal or valve replacement
Temperature dial not responding Faulty thermostat control Thermostat control replacement
Burning smell from fryer Element coating degraded or wiring fault Full inspection and component replacement

Keep Your Fryer in Top Shape

A deep fryer running with a degraded thermostat is not just inefficient — it is a genuine fire risk. Oil that overheats beyond its smoke point becomes combustible. Regular servicing, combined with prompt repair of any fault, keeps your fryer producing great results safely and economically.
